How to Make Fluffy Afghani Biryani Recipe


Here are some tips for making Afghani Biryani:


Ingredients:


  • 1 kg basmati rice

  • 500g yogurt

  • 1/2 kg boneless chicken, cut into pieces

  • 3 onions, finely sliced

  • 1 cup chopped coriander leaves

  • 1 tbsp ginger garlic paste

  • 1 tsp garam masala

  • 1 tsp red chili powder

  • 1/2 tsp turmeric powder

  • Salt to taste

  • 3 tbsp ghee/oil

  • A few strands of saffron



Instructions:


  1. Soak the basmati rice for 30 minutes, then drain and set aside.


  1. In a pan, heat the ghee/oil and fry the onions until golden brown. Add the ginger garlic paste and sauté for 1 min.


  1. Add the chicken pieces, garam masala, red chili powder, turmeric and salt. Cook for 5-7 mins until chicken is cooked through.


  1. Add the chopped coriander leaves and yogurt. Cook for 2-3 minutes.

  2. Add the soaked rice and about 3 cups of water. Let it come to a boil.


  1. Once boiling, reduce heat, cover and cook for 15-20 mins until rice is tender.


  1. When done, mix in the saffron strands and fluff rice with a fork. Serve hot topped with fried onions.
