Here are some tips for making Afghani Biryani:
Ingredients:
1 kg basmati rice
500g yogurt
1/2 kg boneless chicken, cut into pieces
3 onions, finely sliced
1 cup chopped coriander leaves
1 tbsp ginger garlic paste
1 tsp garam masala
1 tsp red chili powder
1/2 tsp turmeric powder
Salt to taste
3 tbsp ghee/oil
A few strands of saffron
Instructions:
Soak the basmati rice for 30 minutes, then drain and set aside.
In a pan, heat the ghee/oil and fry the onions until golden brown. Add the ginger garlic paste and sauté for 1 min.
Add the chicken pieces, garam masala, red chili powder, turmeric and salt. Cook for 5-7 mins until chicken is cooked through.
Add the chopped coriander leaves and yogurt. Cook for 2-3 minutes.
Add the soaked rice and about 3 cups of water. Let it come to a boil.
Once boiling, reduce heat, cover and cook for 15-20 mins until rice is tender.
When done, mix in the saffron strands and fluff rice with a fork. Serve hot topped with fried onions.
