How To Make Ambur Mutton Biryani Recipe


Ambur Biryani is very popular in Tamil Nadu and many other places. Some renowned biryani outlets in Ambur have popularized the dish beyond the town's borders.


So in summary, Ambur Biryani originated and is native to Ambur town in Tamil Nadu which is renowned for its leather tanning industry and delicious biryani recipe.


Here is a recipe for making Ambur Biryani:


Ingredients:


- 1 kg mutton, cut into medium pieces

- 500g long grain Basmati rice

- 5 onions, sliced 

- 15 shallots, finely sliced

- 10 garlic cloves

- 2 inch ginger, grated

- 4 green chilies, slit

- Handful of mint leaves

- Handful of coriander leaves  

- 1 cup yogurt

- 1 lemon, juiced

- 4 tbsp ghee

- 1 tsp fennel seeds

- 5 cloves

- 3 cardamoms 

- 1 star anise

- 1 stick cinnamon 

- 2 bay leaves

- Salt to taste


For Marination:


- 2 tsp chili powder

- 1 tsp turmeric

- 1 tbsp coriander powder

- 1 tsp garam masala

- Salt to taste

- Juice of 1 lemon


Method:


1. Marinate mutton with above ingredients for 2 hrs. 

2. Soak rice for 30 mins. Boil with salt and drain.

3. Heat ghee in a pan. Add whole spices and let them splutter. 

4. Add onion, shallots, ginger, garlic and saute till golden.

5. Add marinated mutton and cook till oil separates.

6. Add yogurt, mint, coriander and sauté for 5 mins. 

7. Layer rice and mutton in a pot. Top with fried onions, mint leaves. 

8. Sprinkle lemon juice, ghee and seal pot. Cook for 30 mins on low flame.

9. Serve ambur biryani garnished with fried onions and coriander leaves.
